Our approach

At Little Rock Winemaking, we believe exceptional wine begins with thoughtful viticulture and finishes with precise, purposeful crafting. We work side-by-side with growers and producers to maximise the potential of every plot, balancing hands-on vineyard management with attentive, minimal-manipulation cellar practices.

But a great vintage needs a clear path to market. Our team provides dedicated brand strategy and sales consultancy, blending technical skills with practical commercial insight, from fermentation to building a thriving, profitable business.

What we do

Ten things we help with, from the ground up.

Pick one service or all ten. We start where you need us, whether that's a winery still on paper or a wine that's ready to sell.

  1. A winery laid out for the way you work, kit chosen for this year and the next, and a budget that holds.

Little Rock Winemaking collaborates with a premier team of designers to build a winery layout that streamlines production efficiency. We align every blueprint with UK Health and Safety standards, preventing costly structural adjustments down the line.

We partner with leading engineers and equipment suppliers both domestically and internationally to tailor solutions to your immediate goals and future scaling needs. From barrels, presses, and filters down to the smallest component, we help in decision making for machinery sourcing that respects your budget and operational expansion plans.

Financial sustainability is paramount at every stage of winemaking. Our experienced team provides foundational financial guidance to protect your margins through strategic annual planning, structured wine release schedules, and strict cost mitigation.

  2. A season plan built plot by plot, and the calls on canopy and press that decide the style of the wine.

We help you construct a comprehensive annual production roadmap by studying the unique potential of each vineyard plot, grape variety, and blending combination to elevate wine quality. Strategic foresight streamlines winery preparation, enhancing equipment utilisation, vessel allocation, scheduling, and labour efficiency.

Following the selection of your harvest date, pressing and canopy management represent the most pivotal decisions shaping your wine's style and ultimate character. Nuanced adjustments at this stage yield profound results; through precise planning, we help you enhance both the quality and volume of your yield.

  3. A cellar where everything has its place, and a team that knows why each step matters.

Cellar space efficiency is frequently overlooked, yet strategic layout planning prevents unnecessary expansion costs while guaranteeing seamless inventory rotation and year-round accessibility. Organising your facility systematically places every piece of equipment and vessel exactly where it needs to be, right when you need it.

Your production team is the single most important factor influencing vintage quality. We train staff to fully embrace your winery's core philosophy, directly connecting daily operations with your ultimate production goals. From maintaining strict food safety compliance to preventing oxygen pickup during wine transfers, every technical detail plays a part in delivering a premium bottle.

  4. Tasting trials that settle the blend, and clear work orders that carry it safely onto the bottling line.

Alongside harvest, the blending season is a high-stakes period in winemaking that demands definitive decision-making. Building on pre-harvest insights, we use comprehensive tasting and blending trials to elevate quality and tailor distinct flavour profiles for different target markets.

Translating these trial selections accurately to large-scale production is essential. During bottling preparation, we mitigate risks and prevent costly mistakes through detailed work orders, structured operational planning, and targeted staff training.

  5. Riddling, dosage trials and disgorging done with care, and labels that go on straight the first time.

For sparkling wine, disgorging is a pivotal control point that directly impacts the final bottle; executed efficiently, it elevates the liquid and prevents loss from mishandling. We secure success at this stage through details such as meticulous equipment calibration, precise temperature control, and accurate riddling. Conducting rigorous dosage trials beforehand guarantees that each batch receives the attention to detail required to express its full stylistic potential.

Additionally, we streamline labelling preparation to eliminate errors and avoid expensive re-work. This includes managing bottle temperature and ambient humidity prior to application to ensure flawless label adhesion and exact placement.

  6. Hygiene built into the daily routine, with a team trained to handle cleaning chemicals safely.

Strict adherence to Food Hygiene and Health and Safety standards is non-negotiable for preventing microbial contamination, protecting brand integrity, and preserving the true quality of your wine. To guarantee a spotless production environment, rigorous cleanliness and sanitation protocols must be deeply embedded into daily operations.

We provide comprehensive staff training focused on chemical safety, empowering your team to handle cleaning and sanitising agents safely while maintaining the highest regulatory standards across the winery.

  7. Written, step-by-step procedures, so the same job is done the same way, whoever is on shift.

Standard Operating Procedures (SOPs) are the backbone of a successful winery, transforming complex technical processes into consistent, repeatable successes. In an industry where a single minor oversight can compromise an entire vintage, SOPs mitigate operational risks by establishing clear, step-by-step blueprints for everything from sanitation to bottling.

By defining exact protocols, these procedures ensure unwavering quality, maintain strict regulatory compliance, and improve labour efficiency. Ultimately, they empower staff to work safely and autonomously, protecting both your physical stock and your brand's reputation year after year.

  8. Small trials and good records, so you can try something new without risking the main vintage.

Winemaking is an intricate chain of decisions shaped by constantly shifting variables, where rigorous research and preparation allow you to craft a wine that truly embodies your brand's philosophy and the soul of your terroir. Because nature grants only one chance each year to capture a vintage, meticulous documentation and structured data are vital to your winery's future growth and its ability to adapt seamlessly when required.

Sometimes less is more, allowing a minimalist approach to let the wine speak for itself. At other times, we must intervene with a steady hand, guiding the process with confidence and precision. Micro-scale experimentation provides a safe space to test these boundaries and innovate passionately, ensuring you never risk your core production while pursuing the next breakthrough expression of your vineyard.

  9. A clear brand and the right partners, through importers and distributors in more than 25 countries.

Crafting an exceptional wine is only the beginning; success in the global marketplace requires a definitive brand identity, data-driven market insights, and strategic sales placement. We work with premier importers and distributors across more than 25 countries, cultivating trusted, long-term trade relationships.

From identifying regional consumer trends to navigating complex export regulations, our team provides the reliable commercial infrastructure and market reach necessary to elevate your brand position and safely expand your distribution footprint worldwide.

  10. Tastings and events with some of the UK's best restaurants and wine bars, and advice on selling to both.

Navigating the UK wine market requires a sophisticated approach tailored to the unique dynamics of both retail channels and premium hospitality venues. To position your brand effectively, we leverage our deep connections with the UK's most prestigious wine establishments.

Our team has a proven track record of conceptualising and executing high-profile industry events alongside the country's finest restaurants, Michelin-starred venues, and leading wine bars. By bridging the gap between production and high-end hospitality, we provide the strategic commercial guidance necessary to secure visibility, build brand prestige, and drive growth across both the on and off-trade sectors.
